Simple, healthy and delicious. Can't ask for easier than that over this holiday period!
1 chicken breast
1 tbsp olive oil
The juice and zest of half a lemon
½ tsp oregano
½ tsp fresh thyme
1 garlic clove
Salt and pepper seasoning
½ cup of broccolini
½ cup of cauliflower
1 cup of English spinach
Pound the chicken breast between 2 pieces of baking paper. Use a mallet and pound to approx. ½ inch of thickness.
Use a mortar and pestle to combine the rest of the ingredients into a paste. Alternatively, you can use a high-speed blender.
Coat the chicken breast with the marinade, place in a bowl and put in the refrigerator for at least 30 mins (up to 12 hours). The longer you leave to marinade the better.
Prepare the vegetables and place in the steamer for 7-10 minutes
Preheat the grill to a medium heat.
Place the chicken breast on the grill making sure it is covered in marinade.
Grill for 2-3 minutes each side
Eat with the serving of steamed vegetables
Top with 1 tsp of butter or coconut oil, seasoning and lemon juice.
