Teriyaki Salmon with Steamed Greens

Salmon is one of the best sources of omega-3 fatty acids, a great source of Protein, high in B Vitamins, Potassium and Selenium. Get some salmon on your plate this week!


INGREDIENTS:

  • 1 fillets salmon

  • 1 tbsp. ginger root, sliced finely

  • 1 clove garlic, crushed

  • 1 tbsp. tamari soy sauce

  • 1 tsp. olive oil

  • 1 tsp freshly chopped chilli

  • 1 cup of greens (spinach , broccoli, bok choy)

METHOD:

  1. Preheat the oven to 180 degrees C.

  2. Place the ginger and garlic in a bowl and mix with the tamari, chilli, and a drizzle of olive oil.

  3. Combine the salmon fillets in the bowl with the marinade and season with salt and pepper. Cover with cling wrap and set aside in the fridge to marinate for at least 20 minutes, or up to 2 hours.

  4. Prepare your greens and place in the steamer for 7 minutes.

  5. Heat a large (oven proof) frying pan over medium heat with a dash of oil. When hot, add the salmon, skin side down, reserving the marinade.

  6. Cook for 2 minutes, then pour over the reserved marinade and cook for a further minute or so.

  7. Finish off in the oven for 5-7 minutes (or until cooked through)

  8. Drizzle with tamari and fresh grated ginger
